'Why do Swedes eat fermented herring? And why are probiotics so important? And how did they preserve food back in the day? Can you eat rotten or spoiled food and how do you ferment food safely?  Probiotics are good bacteria which is very helpful for your stomach. It will help get rid of bacteria. Eating fermented herring is an old Swedish tradition and you eat it every third thursday of August. The tradition started around the 16th century because there was a salt shortage.  We eat fermented foods because it is full of good bacteria, or probiotics as they are also called.  Evolution taught us not to eat rotten food but we can still eat some of it!'
