The Singaporean street food served here, in the bustling Kowloon neighbourhood of Mong Kok, is prepared and served by physically and mentally disabled staff. Koh first set up Dignity Kitchen in Singapore a decade ago, where thousands of people with disabilities have been trained and placed into restaurant and hospitality positions. Now he has replicated that model in Hong Kong, with the hope of helping the city’s disadvantaged.
