'YANKEE DOODLE When it comes to iconic comfort food, the Mac and Cheese has nailed it! That creamy gooey goodness, just satisfies any cravings for a hearty warming mouthful. Well, today in the rain, cold and gales of a typical British weekend it did just that! Down at Camden Market, London you’ll find the street food supremo\'s The Mac Factory who, after 8 years of being at the forefront, are now masters of this craft. Even though the title says New York, did you know that Macaroni and cheese was a creation that the British can be proud off! Yes, even King Richard 2nd insisted on the medieval version to be on his banquet table! Taken to the USA by Thomas Jefferson (3rd American president) to his Virginia estate, he adapted the dish to become what Americans call the Mac ‘n Cheese. It’s was in actual fact documented by Elizabeth Randolph in The Book Of Cury in the 15th century, that the layers of square pasta, cheese and butter be baked. A dish that also has a place in battle fields with the British originally teasing the Yanks, for them to only turn it around and take the proverbial piss out of the hair pieces that the British men would wear to look elegant (the macaroni wig)!! So the macaroni is not only the staple of this perfect street food but ammunition (of words) during the colonial times of British and American history. #streetfood #macandcheese #foodhistory #london #camden #yankee #foodhistory'
