'Chicken Skin Chicharon is one of the guilty pleasure snacks in the Philippines, I said guilty pleasure as this snack is very high in cholesterol and fat.  Chicharon have been a part of the Philippine culture as you can see this snack being sold in most of the sari-sari stores (thats our version of convinience stores), street vendors, restaurants and even supermarkets.  It is also a very popular beer match due to the fact that there are walking street vendors (balut vendors) who offer this at night when people are having their drinking sessions on the villages.  Proven or proben is short for proventriculus. It is a Pinoy street food made from the mentioned chicken’s inner part. Proventriculus is the glandular part adjacent to thechicken’s gizzard. In preparing proven, each proventriculus is dipped in cornstarch or flour and dip-fried. This looks like KFC’s fun shots but it tastes different and the price is way cheaper.  This street food can be found sold along the streets in various regions around the Philippines. It is served either skewered in bamboo sticks or inside little brown paper bags secured in plastic bag. It is flavored with spiced vinegar before eaten. Proven is a well-loved afternoon snack and pulutan.  Like most street foods, proven is not for the health buffs. It has very high caloric content and crude fat. Moreover, microbial content can be dangerously high if it is not hygienically prepared and left at ambient temperature for some time. However, it can still be safe to eat as long as it is properly cooked (since heating destroys most of the pathogenic bacteria) and eaten immediately after cooking.  Now you may be wondering what it is with proven that makes it a favorite despite all its health hazard characteristics. This is because of certain factors. Budgetwise, it is really affordable. Its price ranges from 10 pesos to 20 pesos depending on the quantity. So you see, it is a cheap snack for those who are tight on the budget. Price is not only the factor, its unique taste also matters a lot. Proven has this distinct juicy texture and savory taste provided by it being rich with enzymes. What makes it even more delicious is the flavorful spiced vinegar that goes with it. Only the thought of it makes my mouth water!  Proven is especially famous in Los Baños, Laguna where it has been a campus staple at the University of the Philippines Los Baños. It has been a custom for students to spend a part of their afternoon at the famous little proven stall at Raymundo Gate. This place is located within campus vicinity and is famous for alleys lined up with carinderias (little eateries) and street food stalls. The humble stall has been really famous that it attracted a wider set of customers all around Laguna and nearby areas. I think the secret of this stall’s success lies mainly on the vinegar. Their spiced vinegar have this perfect blend of spicy, sweet and sour flavor that seems to be so addictive. Also, the breading is just right unlike other outlets where the proven is overly covered with flour. Their yummy proven is always in demand that you will have to line up before having your bag of proven. Some customers even make reservations just to make sure that they will be secured of their orders since the product always ran out easily. Their proven is generally safe to eat since the product is sold right after cooking, unlike other stalls which stock their proven for long hours inside a glass shelf.
