'In this video I show you what I\'ve been canning this year as well as talk about the benefits of food preservation. I can food to maximize the nutrient content (in season food is always more nutritious than out of season); put food away when it\'s plentiful & cheap; have a convenient option of cooked food available; and also to save money in an environmentally friendly manner (even better than freezing). I cover the basic history of canning and discuss three methods people use. They are open kettle, water bath (boiling water), and pressure canning. Up until I started researching these recently, I had only known about the open kettle method (having learned it from my parents). You can see this method in my video on how to make elderberry jam here - https://www.youtube.com/watch?v=XwBIZIvq4Kk However, it seems that many people recommend against using this method since it cannot guarantee that all the contents of the jar (air included) are sterilized. Using water bath canning is recommended for those foods which are acidic (most jams, things with vinegar, etc) and using the pressure canning method for those foods which are not (certain vegetables, any kinds of meat, etc). With meat especially, you need to be extremely careful as it is almost impossible to avoid some sort of fecal contamination from coming into contact with the meat during processing. This is just one of many reasons I think it is unhealthy to consume animal products... but that is another topic for a later video. Despite the processes seeming a little bit complex at first, I promise you it\'s a worthwhile thing to learn and I hope this helps inspire you to do some canning of your own!
