'Fueling Up Before Book Shopping My go to meal is always a salad packed with nutrients and plant protein. Add a little chick peas for extra protein and I’m fueled and ready for anything. Feeling my best when eating at my best. Book shopping has never been easier after eating healthy - walking up and down the book isles, squatting up and down the cases to read the bottom, middle and top shelves and carrying a massive pile of books around to be purchased helps with my muscle strength. This featured salad consists of spring mix, tomatoes, pickled red onion, shredded red beets, shredded carrots, chick peas and cinnamon yams.
